This is a quick and delicious meal that takes relatively little time to make. My husband loves pork and this is one of his favorites. I often roast acorn squash with the loin and this meal is doubly delicious. 6 large garlic cloves, pressed
4 teaspoons chopped fresh rosemary or 2 teaspoons dried
1 1/2 teaspoons coarse salt
1/2 teaspoon ground black pepper
1 2 1/2-pound boneless pork loin roast, well trimmed
Acorn Squash (optional)-cut into slices
Hoisin sauce (optional)
Preheat oven to 400°F. Line 13 x 9 x 2-inch roasting pan with foil. Mix first 4 ingredients in bowl. Rub garlic mixture all over pork. Rub olive oil on the acorn squash. Salt pepper and sprinkle rosemary and garlic over the acorn squash if you are doing this. I sprinkle cayenne pepper on my squash for a zip. Place pork, fat side down, in prepared roasting pan. Roast pork 30 minutes. Turn roast fat side up. Roast until thermometer inserted into center of pork registers 155°F., about 25 minutes longer. I sometimes like to brush hoisin sauce over the pork in the last 15-20 minutes to cooking. It's add a nice flavor. Or you can dip the pork into the hoisin. Remove from oven; let stand 10 minutes. The squash should be done when the pork is done.
