Since I am madly in love with my new Blendtec blender, I am trying out various recipes with the plethora of fruits we have in our freezer. I found this simple recipe on epicurious.com that seemed pretty tasty. I love lime so I knew it would be good. I altered the recipe to make it a little better since the first time around it was a little gritty. After blending everything together run the mix through a sieve to get rid of the small bits of blueberry skin. These were really good and it made our tongues purple!
Yield: Makes 6 large popsicles
- 3 cups fresh or frozen blueberries (not thawed)(about 1 lb)
- 1/4 cup + 2 TPSP of Splenda Sugar Blend
- 1/2 cup water
- 1/3 cup fresh lime juice
- Special equipment: 6 large ice pop molds
Simmer blueberries, 1/4 cup Splenda sugar blend and water in a 1 1/2- to 2-quart heavy saucepan, stirring occasionally, until blueberries burst and collapse, 3 to 5 minutes. Purée with lime juice in a Blentec blender until smooth. Blend in 2TBSP of more Splenda sugar to taste. Strain mixture in a sieve. Pour into molds and freeze overnight.
