Fish Tacos

Nothing is more yummy to me than fish tacos. It reminds me of my time in California driving along the coast and stopping at dive bars for a bottle of Dos Equis and a few fish tacos for a few bucks. In Wisconsin it’s hard to find a good place that makes them good.  We have a new place called Texas Tubb’s Taco Palace in Madison, but their fish tacos just don’t measure up for the price.

It's Wednesday and just when you think you don’t have anything left in your fridge…somewhere near the back you discover some sour cream and oh yeah those frozen tilapia I just bought at Costco and those ripe bag of avocados.  In an instant you have really a great mid-week dinner that everyone will love.

Needs:

  • Flour tortillas (as many as you need)
  • 4-6 tilapia filets

Breading

  • ¼ cup corn meal
  • ¼ cup flour
  • ¼ tsp ancho chili powder
  • ¼ tsp pepper
  • 1 tsp salt
  • ¼ tsp paprika

Dip tilapia fillets in milk and evenly coat both sides with breading.  Sautee in a little bit of peanut oil until golden brown on both sides (~3 mins each side).

Bob's Guacamole

  • Two avocados, mashed
  • ¼ yellow onion, minced
  • juice of ½ lime
  • salt to taste
  • diced cherry tomatoes (optional)

Spiced Sour Cream

  • ½ cup sour cream
  • juice of ½ lime
  • ancho chili powder to taste

Assembly: Tortillas are grilled on the stove and the fish tacos are assembled as you wish.  I added a little bit of Louisiana Hot Sauce to spice it up.  ‘Cause that is just the kind of girl that I am!  Enjoy!
